Cauliflower Cabbage Slaw ▶️ with Pomegranates & Almonds with 🥑 Avocado Lime Dressing – Heart Healthy
2 cups raw riced cauliflower
2 cups raw shredded cabbage
3/4 cup slivered almonds
1 cup pomegranate seeds
1 large ripe avocado, peeled with core removed
3 garlic cloves
1/2 bunch of cilantro, long stems removed
Juice from 2 limes
2 tablespoons apple cider vinegar
1/2 cup olive oil
1/4 cup + water
Salt to taste
- Place cauliflower, cabbage, almonds, and pomegranate seeds in a large bowl and toss together.
- Place the avocado, garlic, cilantro, lime juice and apple cider vinegar in a food processor and pulse until smooth.
- Slowly add in the olive oil until combined and then adjust the thickness by adding the water a little at a time until desired consistency is reached.
- Season with salt. Keep covered in the refrigerator for up to a week. Add grilled chicken, fish or boiled eggs as protein.
